A pop-up cafe serving American signal crayfish from the River Thames. Crayfish Bob’s explored the issue of invasive species and (in a small way) helped to eradicate the American Signal Crayfish by eating them! This species has already almost wiped out the UK’s native white-clawed crayfish and is plentiful in our waterways. Meanwhile we import most of the crayfish we eat in the UK from China.
